Cakes are fun to bake. But sometimes they aren’t that simple to make. Well this cake is the opposite.It is quick and simple to make. This is a South African Summer Bake that we love – Granadilla Cake.
Granadilla Cake Ingredients
1 and 1/2 cups of self-rising flour
- 3/4 cup Sugar
- 1/3 cup Oil
- 1/2 cup Cold milk
- 3 large eggs
- 5 ml vanilla essence
- Pinch of salt
- Pulp of 5 granadillas, about 100g, or a small tin of granadilla pulp (you can get fresh pulp from Woolworths)
Preheat the oven to 180 degrees Celsius, and prepare one bunt or ring cake pan with nonstick spray.
- Separate the eggs. Whisk the egg whites until stiff peaks form.
Mix all the other ingredients in a different bowl.
Mix a large spoonful of the egg whites to loosen the batter.
Fold in the rest of the egg whites.
- Transfer the batter to the prepared cake pan.
- Bake for 20 – 30 minutes, if your tester comes out clean, your cake is done.
For Icing, make a simple butter cream with some granadilla pulp.
