Chocolate Stout Cake

We have seen loads of recipes for Chocolate Stout Cake on the Internet and we have tried many too. So to Celebrate International Chocolate Cake day, we thought we would share our Stout Cake Recipe with you.
We Found the base of this recipe a few months ago and since then have tweaked it to be this.

Ingredients: 

225 g butter 
350 g brown sugar 
4 free-range eggs 
375 ml milk stout or non-alcoholic beer 
100 g good quality cocoa powder 
225 g cake flour 
½ t baking powder 
2 t bicarbonate of soda 
250 g butter, softened
1 kg icing sugar
65 ml milk
100 g good-quality dark chocolate, melted 

Method:

  1. Preheat the oven to 180°C.
  2. Grease 2 x 20 cm round cake tins or 3 x 18 cm tins with non-stick spray, then line the bases with baking paper.
  3. Cream the butter and sugar together until pale and fluffy. 
  4. Add the eggs one at a time, while whisking, until incorporated.
  5. In a separate bowl, mix the milk stout/beer and cocoa.
  6. Sift the flour, baking powder and bicarbonate of soda together, then add, alternating with the egg mixture, to the milk stout-and-cocoa mixture.
  7. Pour the batter into tins and bake for 30 minutes in the center of your oven, or until a skewer inserted comes out clean.
  8. Allow the cakes to cool for 5 minutes before turning them out and cooling further on a wire rack.

 

 

For the dark chocolate icing 

Ingredients: 

250 g butter, softened
1 kg icing sugar
65 ml milk
100 g good-quality dark chocolate, melted 

Method:

  1. Place the butter into a mixing bowl and cream lightly 
  2. Add the icing sugar, a little at a time, and mix.
  3. Add the milk and mix. 
  4. Add the dark chocolate and mix until even in colour and smooth.
