This last week, everyone in my office was getting sick. Then my friends and Boyfriend got sick. It was only a matter of time before the flu got me too. Slowly I started to get the symptoms, a runny nose and a sore throat. Other than lying in bed with a good book and a cup of hot chocolate, one of the only things that makes me feel better is Chicken Noodle soup.
I would normally go out and buy some soup from the shop- already made and easy to prep. But over the weekend, I was craving home made soup. So I set to work. Luckily, I found some cooked chicken in the fridge (which meant less cooking for me). So I made a quick noodle soup. Check the recipe below.
Chicken soup is one of those things that makes you feel better almost instantly. I added a bit more ginger than I suggested in the recipe because ginger is great for fighting flu. The same goes for the garlic. So if you aren’t scared of these flavours, feel free to add some more. The same goes with the chilli, add this to how hot you like your food.
You can also take out the water and add more vegetables (like spinach, carrots, Zucchini and red peppers) and turn it into a one pot Stirfry. To do this, you would cook the veg with the garlic and ginger. You would then add the cooked chicken and sauces and cooked noodles.
